Opt for the bolt-resistant, monogerm variety of Moneta beets, known for easy growth and reduced thinning needs. Harvest young as 'baby beets' or let them mature into larger roots. Sow seeds directly into well-prepared, watered soil with 30cm spacing between rows. Regular sowings every three weeks ensure a continuous supply of these delightful beets. Store harvested roots in dry sand for winter use, and twist off leaves to preserve their vibrant colour. Young beet leaves are also edible, adding a fresh, earthy flavour to salads.
